#1 JS Test Knife 9.3” western style chef knife, casted custom copper alloy bolster and pin

This western style chef knife is made using 5160 steel for the blade. The handle is a beautiful stabilized and dyed red oak burl. The distressed bolster and polished domed pin are made from my custom casted copper alloy. A beautiful rosey-bronze hue. This is a very fast knife for being over 9”. The “S” grind in the blade helps with weight reduction and assists with food release.

This is one of my favorite user style knives. Easy to choke up on and pinch in front of the bolster for gentle and precise food sculpting. A gently rounded spine for comfort.
